With fall now upon us its the perfect time to indulge yourself in hearty, delicious meals, and make the most of our seasonal bounty. This is a traditional recipe from the Bilecik region tastes great with the freshest ingredients. 1/2 kg Pumpkin
1 small onion
1 small carrot
1 small potato
125ml of cream
2 pinches freshly grated nutmeg
salt and black pepper to taste
For the Walnut Dressing
Serves 4-5 people
Begin by chopping your carrot, potato and pumpkin into roughly 3cm cubes.
Then add all of your vegetables to a medium sized sauce pan and fill with cold water until just above the level of the vegetables.
Then add your sauce pan to a medium heat and cover, leaving to boil.
Once the water has reached boiling point remove from the the heat. Season generously with sea salt and black pepper and grate nutmeg into the pan.
Next to liquify the mixture, decant into a food processor or blender and give it a good blitz until you have a smooth consistency.
Return your mixture back to the pan under a low heat and leave to boil again, reducing the water content in the process and intensifying the flavour.
Once your mixture starts to boil add the cream, stirring thoroughly until it's evenly distributed, leave to boil for 2-3 minutes and then remove from the heat.
Next for the walnut dressing.
Crush your walnuts in a mortar and pestle until they are medium size chunks, but stop before they turn to powder.
Add butter to a small frying pan and melt, once melted add your crushed walnuts and stir occasionally until they are evenly coated in butter and toasted.
Serve in deep bowls adding the walnut dressing on top with a thick slice of crusty bread.
